Sri Lankan Prawn Curry

750g med raw prawns
1 medium onion, finely chopped
3 cloves garlic, finely chopped
1 teaspn finely grated fresh ginger

small stick cinnamon
1/4 teaspn fenugreek seeds
4-5 curry leaves
small stem lemon grass, bruised, or 2 strips lemon rind
1/2 teaspn ground turmeric
1 1/2 teaspn chili powder or flakes
2 teaspns paprika
1 teaspn salt
2 cups coconut milk
good squeeze lemon juice
METHOD
1. wash prawns and remove heads, but leave shells on. ( this retains the flavor)
2. In a medium sized sausepan saute onion, garlic, ginger and fenugreek seeds in a little oil, till onion is clear.
3. Add remaining ingredients and bring slowly to simmering point. Simmer uncovered for 20mins. Add lemon juice and stir, taste and add more salt and lemon juice if desired.
4. serve with Basmati rice, papadoms and roti.
