Spicey Meatloaf
SPICEY MEAT LOAF
500gm rissole mince - ask butcher for beef rissoles
1 onion diced
2 garlic cloves crushed
1 cup breadcrumbs
1 tablespn each, of tomato paste and worscestershire sauce
1 tablespn parsley chopped
salt and pepper to taste
2 eggs
1/2 jar of our "CORN AND PEPPER RELISH"
3 bacon rashers (long ones) maybe more if you like lots of bacon
METHOD
1.Line a loaf tin with the rashers of bacon, laying the strips from side to side.
2.In a large mixing bowl add the rest of the ingredients and mix together well, press into the loaf tin on the bacon.
3.Wrap the bacon ends over the top, refrigerate for 1/2 hour.
4.Bake in a medium heat oven (180C) for 45mins or until cooked.
5.Traditionally served, sliced with gravy, mashed or steamed potatoes and a medley of vegetables.
6.also if theres some leftover its good cold on sandwhiches with mustard or corn and pepper relish.
