Spaghetti Bolognese
Spaghetti Bolognese
Serves 4-6
1 large onion, peeled and diced
1Tablespoon olive oil
500g beef mince shaped into golf ball sized balls.
4 cloves garlic, crushed
1 Tablespoon Italian herbs
1 bay leaf
1 Tablespoon freshly chopped parsley
1/4 cup tomato paste
1 700g jar passata
1/2 cup red wine
1 cup water
125g mushrooms sliced - optional
250g spaghetti
freshly grated parmesan
METHOD
1. Put oil in a large saucepan and fry onion until soft, add garlic, herbs and tomato paste, fry further 2mins stiring constantly, add passata, wine, and water, stir to mix ingredients.
2. Add the mince balls, cover and simmer for 1 hour stirring occasionally.
3. When hour is up, break up mince balls till evenly distributed through the sauce. Add mushrooms at this point and cook a further 15mins.
4. In this 15mins, boil your spaghetti till el dente. Strain but do not rinse.
5. In the spaghetti pot on medium heat add a little butter, melt then add a ladel full of sauce and the cooked spaghetti and toss till coated with sauce over the heat(this is a quick process).
6. serve spaghetti with added sauce on top and sprinkled with grated parmesan and garnish with Italian parsley or basil, as seen in the picture above.
7. Serve a tossed salad and warm crusty bread with your Spaghetti bolognese.
