Potato Bake
- 3-4 large potatoes
- Sour cream
- 1/2 cup (125ml) pouring cream
- shallots, onion or spring onion
- 3 slices ham or bacon-or more, if needed
- Freshly ground pepper and salt to taste
- 125g tasty or cheddar cheese, grated, can use more if your a cheese lover.
METHOD
Preparation:15 min Cook: 30-45min
1. Preheat oven to 180 degrees C. Grease a square or rectangular casserole or baking dish. 2. Peel potatoes and place whole into a recycled plastic vege bag tie off with single knot, place in microwave for 5-6mins. Take out of the microwave and bag and place potatoes on to chopping board and slice thinly. Wait for the to cool a little first.
3. Slice the shallots, onion or spring onions.
4. Slice bacon or ham and grate the cheese.
5. In the baking dish smear a tablespoon of sour cream, place a layer of potato slices, follow this with a sprinkling of salt and pepper. Sprinkle on bacon or ham, onions some pouring cream and cheese. Repeat the layering until you run out of room in the dish.The final layer should be potatoes, covered with only cheese and pepper.
6. Bake in preheated oven for 30 - 40 minutes or until golden brown on top.
7. Serve as a side dish with your favorite BBQ or roast. Garnish with chopped parsley.
