Beetroot, Spinach and Raspberry Salad
BEETROOT, SPINACH AND RASPBERRY SALAD
100gm baby spinach
125gm feta cheese
1/3 cup walnuts/pecans roasted and chopped roughly
8 small beetroot, steamed and cut into 1 inch cubes or 850gm baby beets from the supermarket.
DRESSING
125gm fresh raspberries
1/4 cup olive oil
2 tablespoons white wine vinegar
1 teaspoon sugar
METHOD
1. top and tail beetroot and steam whole for around 30mins. remove from steamer and refrigerate. When cooled remove skin and cut into 1 inch cubes, or strain baby beets and add whole.
2. In a bowl mix (with gloves on), beetroot, baby spinach, cheese and nuts, set aside.
3. combine dressing ingredients and whisk together vigorously, season with salt and pepper. Spoon over salad and serve.
