Australian damper

AUSTRALIAN DAMPER
This simple baked bread can be made in your kitchen or on your BBQ  or when your out in the bush in the coals of your fire. A very versitile and quick meal. 'Truly Australian'

2 cups self raising flour
1/2 teaspn salt
1 1/4 cups milk, approx
a handful of sultanas if you would like.

Method
sift the flour and salt into a bowl,(add the sultanas at this part) add sufficient milk to make a manageable dough. Bake on greased and floured baking sheet 25 - 30 minutes at 220*c. Baste with milk during cooking. Serve with lashings of butter and your favourite jelly.
PUMKIN AND HERB DAMPER
350 grams self raising flour (white)
1/4 teaspoon salt
Tablespn freshly chopped parsly
20 grams butter
1 cup pumpkin (cooked and mashed)
5 tablespoons water
Method
Sift flour and salt into a bowl, add chopped parsley and rub butter into flour mix until it resembles bread crumbs. Add the mashed pumpkin and water to the flour mix and combine into a manageable dough. If the dough is too wet add another Tablespn flour. Bake on a greased and floured baking sheet 25 - 30 minutes at 220*c. baste with milk during cooking. Serve with lashings of butter or your favourite soup.
